Celebrate National Tequila Day with This Grilled Chicken Recipe

When you’re looking for healthy recipes to prep for the week, there’s nothing as easy or as versatile as grilled chicken. It's a one-stop shop for protein-packed lunches and healthy dinners right along side a plate of fresh veggies, hearty grains, and more.

Rachel already showed us her favorite Lemon Herb Chicken recipe, but this time around, she’s demonstrating something even more fun for National Tequila Day! Her Tequila Lime Chicken uses fresh spices, herbs, and a kick of tequila to give the protein a whole new level of flavor. Even better, it’s a more nutritious way to celebrate Tequila Day instead of throwing back a margarita (or two!)

∙ 1/2 cup fresh lime juice
∙ 1/4 cup tequila
∙ 1/4 cup olive oil
∙ 2 tablespoons chopped cilantro
∙ 1 tablespoon chili powder
∙ 1 teaspoon honey
∙ 2 pounds chicken breasts
∙ 1 teaspoon ground black pepper
∙ 1 pound green beans
1. Marinate chicken with all ingredients overnight or for at least 4-6 hours.
2. Line baking sheet with parchment paper - spread out green beans and place chicken in middle.
3. Pour remaining marinate over green beans.
4. Cook in pre-heated oven at 400° for 30 minutes. Enjoy!
